DESCRIPTION
Grape variety: Nebbiolo (Chiavennasca) 100%
Production area: Sondrio district, Le Prudenze locality
Yield per hectare: 75 hL per hectare
Harvest: First 10 days in November
Sugar content: 22,5 Babo
 Alcohol content: 14%
Total acidity: 6,3 g/L
Residual sugar: Trace
Solids: 30 g/L
Vinification: Submerged cap fermentation in 25 hL oak vats with three pump-overs a day at a controlled temperature not exceeding 28 °C. Duration of fermentation and maceration: 10 days. Malolactic fermentation continues in large barrels until the beginning of summer
Ageing: Half new and half one-year-old barriques/tonneaux for 24 months. The wine is stored in open steel vats to decant naturally. The wine is the bottle cellared for approx. six months before distribution
TASTING NOTES
Colour: Ruby red with garnet highlights
Nose: Fruity, with plum, wild strawberry and redcurrant notes. Bottle age character: graphite, tobacco and oak bark
Palate: Dry and warm. An initial softness balances out a noticeable acidity and big tannins, which ensure good long-term cellaring
Food pairings: Valtellina cuisine, robust Italian and International dishes such as roast meats, fowl, game,  hard and mature cheeses
Serving conditions: Serve at 18 °C and in Nebbiolo glasses. Cork a short while before serving. Distributed in 750 mL, 1500 mL and 3000 mL bottles
Vintage: 2014 was a very difficult year due to the wet and cold climate. To obtain quality wines it was necessary to select only the best bunches, having a yield loss of about 30-40%
