DESCRIPTION
Grape variety: Nebbiolo 100%
Production area: Berbenno di Valtellina
Yield per hectare: 70 hL per hectare
Harvest: First 10 days in October

 Alcohol content: 16%
Total acidity: 6 g/L
Residual sugar: Trace
Solids: 32 g/L
Vinification: After three months of drying, grapes ferment at controlled temperature (28 °C) in Slavonian oak of 33 Hl for 30 days. The must undergoes a first racking and is allowed to settle before being racked into barriques to mature
Ageing: 24 months in new barriques, then 6-8 months bottle cellaring before distribution
TASTING NOTES
Colour: Intense ruby red
Nose: Fruity nose with maraschino, blueberry, strawberry and blackcurrant notes. Spices such as cinnamon and cloves are also noticeable. Concentrated due to the grapes being in dried prior to vinification
Palate: Dry, soft and elegant with good acidity that accentuates its freshness. Suitable for long cellaring
Food pairings: Well-suited to rich International dishes, game, feathered game, fowl, roast meats, mature and hard cheeses. Also worth trying with dark chocolate desserts
Serving conditions: Cork a short while before serving. Serve at 17-18 °C in ballon glasses. Distributed in 750 mL, 1500 mL and 3000 mL bottles
Vintage: 2013 was a year with a very favorable climate, especially mild and dry. This has given an excellent wholesomeness to the grapes by giving exceptional characteristics to the final product
